Jenny Engvall, owner of Cakes Brighton, says “When I first moved to England from Sweden in 1997, I was really excited to go to my first British wedding. The cake took centre stage at the reception and it looked beautiful, but when I came to eat it I was thinking “What’s this?!”. It was a really dry (and boring) fruit cake. I couldn’t believe someone would want this on the most special day of their life. In Sweden cake is really important – we even have a verb to describe meeting up with friends and family for coffee and cake – “fika”.
